CRAB - SHRIMP STUFFING 
1 stick butter
2-3 stalks celery, chopped
1 bunch green onions, chopped
1 medium onion, chopped
1/2 bell pepper, chopped
Sprig of parsley, chopped
1 lg. crab meat, cooked
1/2 lb. shrimp, cooked and chopped
Garlic to taste
1 - 1 1/2 c. Italian seasoned bread crumbs (Progresso)
2 eggs
Squeeze of 1 lemon
Cayenne pepper to taste
1/2 c. Italian cheese (or to taste)

Saute vegetables in butter. Stir in crab meat and shrimp. Add seasonings and seasoned bread crumbs. Remove from heat and add eggs, lemon juice, and cheese.

This stuffing can be used to stuff flounder, trout, or just baked in a baking dish with added cheese on top. It can also be used to stuff jalapenos. To bake as a casserole, bake for 25-30 minutes at 350 degree oven.
