VERY SPECIAL SEAFOOD CASSEROLE 
1/2 lb. sm. shrimp, cleaned and steamed
1/2 lb. bay scallops, pat dry
1/2 lb. crabmeat
2 c. finely sliced celery
1 c. finely chopped onion
1 c. finely chopped green pepper
3 c. crushed potato chips (reserve 1 c. for top of casserole)
1 tsp. Old Bay seasoning
1 1/2 c. mayonnaise (do not substitute)

Blend all ingredients and put in 3-quart casserole. Sprinkle 1 cup of potato chips on top.

Bake at 350°F for 45 minutes.

When serving for a large group, double the seafood and increase celery by 1 cup; onion, mayonnaise and pepper by 1/2 cup.

Should the scallops be cooked or raw? Also, what should the portions of each ingredient be if I'm using 2lbs of each of the seafoods.

Hi Barb,

The scallops will cook during the 45 minute baking time.

If you're planning on multiplying the recipe by 4, simply multiply all of the ingredients by 4, or do as the recipe says and multiply the celery by 2 cups and the onion, mayo and pepper by 1 cup. Feel free to adjust once everything is assembled and be sure to taste and adjust seasonings before serving. When putting together a large quantity, I usually omit the seasoning until the last step, then add incrementally to avoid overdoing; begin by adding 1 tsp. Old Bay seasoning at a time.
