WEST TEXAS SPECIAL HAMBURGER
CASSEROLE
 
1 lb. ground round
2 (15 or 16 oz.) cans black eyed peas with jalapeno
2 c. cooked rice
1 (16 oz.) can canned tomatoes (2 cups) drained
1 c. grated sharp cheddar cheese
1/2 c. minced onion
1 tbsp. butter
Salt and pepper

Brown hamburger in large skillet, then mix in ingredients in the order given: black-eyed peas, cooked rice, tomatoes, cheese, onion, butter and salt and pepper to taste. Bake in a 13x9x2 baking pan at 350 degrees for 20 minutes.

Variation: Add 1 large clove of crushed fresh garlic to the hamburger while browning and/or red pepper and/or more jalapenos.
