OVEN KALUA PIG 
4 lbs. pork butt
1/4 c. liquid smoke
2 tbsp. rock salt
4 lg. ti leaves, rib removed

Score pork on all sides making 1/4 inch deep slits 1 inch apart. Rub salt into slits, then rub all sides with liquid smoke. Wrap in leaves, then in aluminum foil and seal. Let stand 30-45 minutes.

Place on rack in shallow roasting pan. Roast at 550 for 45 minutes, then at 400 for 3 1/2 hours or until done. Shred cooked pork and let stand in light brine solution before serving. Yield: 8-10 servings.

I tried this recipe today and I must say that I am impressed and pleased. I checked the pork 3 hours in and it is delicious! I decided to hold back on the salt, not knowing how salty it would be, so I will season it once it's out of the oven. So moist... Thank you!
