BANANAS ROYALE 
4 med. bananas, peeled
1/3 c. butter
1/3 c. firmly packed brown sugar
1/4 tsp. cinnamon
1/4 tsp. nutmeg
1/4 c. light cream
2 tsp. brandy or rum extract
1 qt. vanilla ice cream

Slice bananas in halve crosswise, then lengthwise. In chafing dish, melt butter. Stir in brown sugar, cinnamon, and nutmeg. Add bananas; cook 3 minutes over low heat. Bananas should be slightly firm (don't overcook). Stir in cream, cooking until thickened (about 2 minutes). Just before serving, heat extract in small saucepan or ladle until vapors begin to rise. Serve over ice cream. 8 servings.
