COCONUT - PINEAPPLE CREAM PIE 
1 c. sugar
1/2 c. flour
3 egg yolks
Pinch of salt
1 tsp. vanilla
1/2 c. milk
2 c. milk
1 c. coconut
1 1/2 c. crushed pineapple, drained
3 egg whites
1/4 tsp. cream of tartar
3 tbsp. sugar

Combine first 6 ingredients. Heat 2 cups milk and add first mixture. Cook until thick. Add 1 cup coconut and 1 1/2 cups crushed pineapple, drained. Pour into a baked pie shell.

Meringue: Beat 3 egg whites and 1/4 teaspoon cream of tartar, until stiff. Add 3 tablespoons sugar and continue beating until stiff. Put on top of pie and bake in 400 degree oven until lightly browned. (Add a little coconut on top before browning, if you like.)
