CREAMY CAULIFLOWER AND LEEK SOUP | |
2 heads cauliflower, chopped 2 medium sized leeks, trimmed and chopped 4 cups vegetable broth 2 cups unsweetened soy or regular milk 1 tsp. salt pepper, to taste Combine all ingredients (except milk) in a large saucepan and bring to a boil. Reduce heat and simmer for 20 minutes. Puree using a hand mixer (or by pouring soup into a blender). Stir in milk. Serve with a crusty bread or croutons. Submitted by: WellFedVeg |
