RED BEANS SOUTH LOUISIANA STYLE 
1 lb. red kidney beans
Couple ham hocks
2 med. onions, chopped
1/2 c. chopped bell pepper
2 or 3 bay leaves
2 cloves minced garlic
1 tsp. ground cumin
Dash Tabasco sauce
1 lb. sausage, sliced
Red pepper, to taste
Salt, to taste

Wash and pick over beans. Cover with cold water and soak overnight (cover beans with 2-3 inches of water). Using the water they soaked in, add ham hocks, onion, and bell pepper, bay leaves, garlic, cumin, red pepper and Tabasco. Cook slowly for several hours (3 or 4). Add salt after beans are done. The beans will make a thick gravy.

About 20 minutes before beans are ready to serve, add sliced sausage. Serve over rice. Can be cooked in crock pot. Serves 8.
