RIPE TOMATO RELISH 
2 parts tomatoes, washed, peeled, quartered
1 part onions, peeled, cut up in small pieces
2 c. vinegar
1 1/2 c. sugar (more sugar can be used if desired)
1/2 box pickling spice

Bring the above ingredients to a boil. Cook down low for about 1 hour. Have standard quart jars hot. Fill jars with relish leaving 1/8 inch space. Place hot seals on top of jars. Twist down tightly.
