FRUITED BROWN RICE STUFFING | |
1 sm. onion, chopped (about 1/2 c.) 8 tbsp. butter 2 c. brown rice 4 c. chicken broth or water 1/2 c. chopped parsley 1 tsp. salt 1 tsp. leaf sage, crumbled 2 c. sliced celery 2 c. diced dried apricots 2 c. pecan halves, coarsely chopped 1 c. raisins 1 c. diced apples Saute the onion in butter in a large saucepan until soft, about 5 minutes. Stir in the rice. Add the broth; bring to boiling. Lower the heat; cover. Simmer, covered until the rice has absorbed all the liquid, about 40 minutes. Remove from the heat. Stir in parsley, salt, sage, celery, apricots, pecans, raisins and apple. Now you're ready for a holiday feast. |
