LISA'S ZUCCHINI BREAD | |
3 eggs 2 c. sugar 1 c. vegetable oil 1 tbsp. vanilla 3 c. flour 1 tsp. salt 1/2 tsp. cream of tartar 1 1/2 tsp. baking soda 4 tsp. cinnamon 2 c. peeled and grated raw zucchini (4 small) 1 c. chopped walnuts (optional) Preheat oven to 350 degrees. Beat eggs until foamy. Add zucchini, sugar, oil and vanilla to eggs. Beat until well blended. Sift dry ingredients together and add zucchini mixture. Blend well. Stir in nuts. Pour into 2 well greased 9 x 5 loaf pans and bake for 60 minutes or until a toothpick comes out clean. Cool, then wrap in foil and freeze. |
