SQUASH DELIGHT 
1 lb. yellow or zucchini or mixture
1/2 c. chopped green onion
1/2 c. chopped green pepper
1/4 stick butter
1/2 c. sliced water chestnuts
1/2 c. mayonnaise
1 tsp. sugar
1 tsp. salt
1/8 tsp. red pepper
1 beaten egg
1/2 c. grated cheese
1/2 c. buttered bread crumbs

Cook sliced squash, green pepper and onion together until crisp tender. Drain. Combine all ingredients except bread crumbs. Add butter to drained squash. Stir combined ingredients into drained squash. Use a 1 1/2 quart casserole (buttered). Top with crumbs and bake at 375 degrees 30 minutes.
