PEACH & LEMON CONSERVES 
2 lemons
1 c. water
4 lbs. peaches or nectarines
1 tsp. BLAIR cinnamon
1/2 tsp. salt
1/4 tsp. BLAIR ginger
5 c. sugar
1 c. (4 oz.) blanched slivered almonds

TO PREPARE FRUIT: Thinly slice lemons, do not remove pits. Add water and bring to a boil in a large kettle. Reduce heat and cover; simmer 10 minutes. Peel and pit peaches and cut into small pieces.

TO MAKE CONSERVES: Add peaches, cinnamon, salt and ginger to undrained peel, bring to a boil. Reduce heat, cover and simmer 10 minutes stirring occasionally. Add nuts and boil for 5 minutes longer. Remove from heat, skim and stir for several minutes. Fill and seal jars; process in boiling water bath for 5 minutes. Yields: 8 - 1/2 pints.
