SARAH'S SALMON PATTIES 
1 (15 oz.) can salmon, drain and flake
1 egg, beaten
1/3 c. buttermilk
1/3 c. chopped onion
1/3 c. cornmeal or dry bread crumbs
Salt and pepper to taste
1/4 tsp. baking soda
Vegetable oil

Mix all together except vegetable oil. Shape into patties. Heat oil, (1 1/2 to 2 inches) in heavy skillet. Fry. Turn once. Cook 10 minutes or until brown. Drain.

Note: If there is no buttermilk, sweet milk can be curdled by adding a little vinegar or lemon juice.
