GOLDEN MEATBALL CASSEROLE | |
1 lb. ground beef 1/2 c. fresh bread crumbs 1 egg 1 tsp. salt 1/2 c. uncooked rice All-purpose oil 2 lg. carrots, cut in quarters 1/2 c. chopped green pepper 1/4 c. chopped onion 2 c. water 1/2 lb. Velveeta processed cheese spread, cubed Combine meat, bread crumbs, egg and salt; mix lightly. Shape into 18 meatballs. Brown in small amount of oil on all sides in a large skillet; drain. Add water, rice, carrots, green pepper and onion. Cover and simmer 25 minutes. Add Velveeta; heat until Velveeta melts. A recipe that is not shared with others will soon be forgotten, but when it's shared it will be enjoyed by future generations. |
