GOLDEN MEATBALL CASSEROLE | |
1 lb. ground beef 1/2 c. soft bread crumbs 1 egg 1 tsp. salt 2 tbsp. butter 1/2 c. milk 1 c. carrot slices 1/2 lb. Velveeta cheese 1/2 c. green pepper, chopped 1/4 c. onion, chopped 2 c. cooked rice Heat oven to 350 degrees. Combine meat, bread crumbs, egg and salt. Mix lightly. Shape into 12 meatballs, brown in butter. Combine meatballs and remaining ingredients. Mix lightly. Spoon into an 11 x 7 inch baking dish. Cover and bake at 350 degrees for 30 to 35 minutes. Serves 4 to 6. |
