SALMON LOAF | |
1 lg. can salmon 1 tsp. salt 1/2 tsp. pepper 1/4 tsp. paprika 1 tbsp. minced onion 2 eggs, separated 1 tbsp. pimiento, chopped 1/2 c. celery, chopped 1/2 c. cracker crumbs 2 tbsp. lemon juice 1/2 c. milk Mash salmon in a bowl. Add salt, pepper, onion, pimiento, paprika, lemon juice, beaten egg yolks, cracker crumbs and milk; mix well. Beat egg whites until stiff. Fold into salmon mixture. Pour into well greased small loaf pan. I double this recipe for a 9"x5"x3" bread pan. Bake at 350 degrees for 1 hour. |
