SALMON LOAF 
2 1/2 c. canned salmon
1/4 tsp. paprika
1/2 tsp. salt
Dash of pepper
1 tbsp. finely chopped onion
3/4 c. cracker crumbs
3 tbsp. butter, melted
1 c. tomato juice
3 egg yolks
3 egg whites

Remove dark skin and bones from salmon. Separate salmon into flakes by using fork. Mix together salmon, salt, paprika, pepper, onion, cracker crumbs, butter and tomato juice. Add beaten egg yolks, then fold in stiffly beaten egg whites. Pour into well greased loaf pan. Bake at 350 degrees for 1 hour. Serve with a slice of lemon if you wish.
