RHUBARB BREAD 
1 1/2 c. brown sugar
1 egg
1 tsp. vanilla
1 tsp. salt
2/3 c. oil
1 c. buttermilk
2 1/2 c. flour
1 tsp. baking soda
1 1/2 c. diced rhubarb

Mix together and sprinkle 1/3 cup granulated sugar, 1 tablespoon flour and 1 teaspoon melted butter on top before baking in 2 loaf pans at 350 degrees for 45 to 50 minutes.
