MANDARIN ORANGE SALAD 
1/2 head lettuce
1 tbsp. chopped parsley or flakes
2 green onion, chopped with tops
1 can mandarin oranges
1/4 c. caramelized almonds (recipe follows)

DRESSING:

1 tsp. salt
2 tbsp. sugar
2 tbsp. vinegar
1/4 c. salad oil

To caramelize almonds: In skillet put 2 tablespoons sugar and 1/4 cup chopped almonds. Stir constantly over low heat until sugar melts, and turns almonds brown. Put immediately on waxed paper to cool.

Make dressing and drain oranges. Toss all ingredients just before serving.
