CHEESY VEGETABLE CASSEROLE 
1/2 lb. American cheese
1/2 c. butter
1 (16 oz.) bag frozen vegetables
1 c. crushed crackers

(Containing broccoli, cauliflower, and carrots, thawed and drained).

Cut cheese into cubes. Place in saucepan with 1/4 cup of butter, heat over medium fire until melted, stirring often. Place vegetables in a 1 quart casserole dish. Pour cheese mixture over and mix well. Melt remaining butter, stir in cracker crumbs. Sprinkle over top of casserole. Bake, uncovered, at 350 degrees for 20 to 25 minutes. Serve at once.
