CHEESY VEGETABLE CASSEROLE 
2 sm. bags frozen vegetables (broccoli, cauliflower, and carrots mixture)
1 lb. Velveeta cheese
1 stick butter
1 or 2 pkgs. Ritz crackers

Cook vegetables just enough to thaw; drain and place in casserole baking dish. Slice 1 pound of Velveeta cheese (one thin layer) over vegetables. Crumble Ritz crackers over cheese (one layer). Melt butter and pour over everything. Bake at 350 degrees for approximately 30 minutes.
