ROAST LOIN OF PORK | |
4 to 5 lb. pork loin 1 1/2 tbsp. flour 1 tsp. salt 1/2 tsp. sugar 1 tsp. ground mustard 1/2 tsp. sage 1/4 tsp. pepper 1 1/2 c. applesauce 1/2 c. brown sugar 1/2 tsp. cinnamon 1/4 tsp. ground cloves Put pork loin roast in a roasting pan. Combine first 7 ingredients and rub over the roast. Bake in preheated 325°F oven for 1 1/2 hours. Mix the applesauce, brown sugar, cinnamon and ground cloves. After the pork roast has been in the oven for the 1 1/2 hours, spread this applesauce mixture on top and sides of the roast and continue cooking for 2 hours longer or until tender. |
