“CHUNKY POTATO SOUP” IS IN:
NEXT RECIPE:  CLASSIC WALDORF SALAD

CHUNKY POTATO SOUP 
3 cups diced potatoes
1/4 cup chopped onions
1/4 cup chopped carrots (optional)
2 cups milk
3 cups water
3 tbsp. butter
1 tbsp. fresh parsley
1 tbsp. fresh cilantro
1/3 cup ground Parmesan cheese
2 tbsp. all purpose flour
1 tsp. salt
1 tsp. pepper
1 tsp Mrs. Dash original
2 cubes of chicken bouillon
2 tsp. Italian seasoning

Bring water to a boil, add fresh herbs and vegetables. Let boil for 5 minutes, add milk, butter, boil for 3 minutes more; add spices and seasonings, then add flour and cheese.

Stir very well so that the flour and cheese do not clump; continue stirring.

Serve when vegetables are tender and flavors are well blended.

Serve topped with cheddar cheese and add a few saltine crackers.

You will love this! It is my favorite soup! Perfect for guests, a romantic dinner, or just relaxing in the afternoon.

Very good!!!! I did not add Mrs. Dash. I added chicken base and just used chicken broth and can milk no water. This will be my go to tater soup from now on.

Wonderful soup! True comfort food. My child even liked it, ate 2 servings for supper then 2 for lunch the next day. She avoids veggies but really liked this recipe. I added a lot of celery (leaves, stalk, celery salt). I didn't have chicken cubes so I added onion powder. Will make this again.

Super recipe! I added celery and I sauted it with the onion and carrots, I also added keilbasa sausage. I did not have cilantro but added garlic. I think the Italian seasoning and parmeson cheese really made this dish! I will make it again and share the recipe with my friends. thank you Suzanne!

Excellent! Was looking for a potato soup with the chunks of potato, not mashed. Tried this and my husband loves it and he is sometimes hard to please. I doubled the recipe and used 1 can (12 oz) evaporated milk for part of the milk portion needed, only because I had it on hand and was going to use another recipe and decided to use this recipe instead so I used it. I will definitely make it again. Awesome .... loved it !

Fixed this early today. Absolutely fantastic. Only made a couple of changes. I added about 1/2 tsp. bacon bits, so they wouldn't overpower. Did NOT add flour at beginning, when I slowly added the Parmesan. At end of cooking process, blended about 1 tsp. flour with a little water - then added to soup. This prevented clumps, yet helped thicken a little. This recipe is a keeper.....

Great recipe, much like my grandma used to make. I doubled the recipe and added some leftover smoked ham from Thanksgiving. Really hearty for a cold rainy day.
