PECAN SWEET POTATOES 
3 c. sweet potatoes, mashed
1 c. evaporated milk
2 eggs
1/2 tsp. cinnamon
3/4 stick butter
1 1/2 c. sugar (brown or white)
1/2 tsp. nutmeg
1 tsp. vanilla

Mix ingredients altogether. Butter pan and bake 15 minutes at 425 degrees.

SWEET POTATO TOPPING:

1 c. crushed cornflakes
1/2 c. brown sugar
1/2 c. pecans, chopped
3/4 stick butter, melted

Mix all together. Pour over baked potatoes and bake for 30 minutes at 400 to 425 degrees.
