YAM PECAN PIE 
1 c. mashed sweet potatoes, cooked or canned
1/3 c. brown sugar
3/4 tsp. cinnamon
Dash of salt
2 eggs, well beaten
3/4 tsp. ginger
3/4 c. scalded milk

Combine sweet potatoes, brown sugar, cinnamon, ginger, salt, milk and eggs. If fresh potatoes are used, add 1/3 cup sugar. Cool and fill pie shell. Use a deep dish pie shell. Bake at 375 degrees for 20 minutes. Sprinkle with topping (below).

TOPPING:

1/4 c. butter, softened
1/2 c. brown sugar
3/4 c. pecans, finely chopped

Combine ingredients. Continue baking for an additional 25 minutes. Serve with Cool Whip when cool.
