BILL'S IRISH SODA BREAD | |
4 c. flour 3 tbsp. sugar 1 tbsp. baking powder 1 tsp. salt 3/4 tsp. baking soda 8 to 9 tbsp. butter 2 c. raisins 1 tbsp. caraway seeds 1 1/2 c. buttermilk 2 eggs Mix sugar, flour, salt, baking soda, and butter in a pastry blender. In a small bowl with fork beat eggs and milk. Stir into flour mixture. Add raisins and caraway seeds. It will become a moist sticky dough. Turn dough onto floured surface with floured hands. Knead ten strokes. Shape into ball. Place in a deep greased casserole, in center of ball make an X 1/4 inch thick, brush with beaten egg. Bake at 350 degrees for 1 hour and 20 minutes. |
