GREAT IRISH SODA BREAD | |
4 c. flour 1 tsp. baking powder 1 tsp. baking soda 1 tsp. salt 1/2 c. sugar 2 oz. (1/2 stick) butter 1 c. raisins 1 1/2 c. buttermilk or sour milk 3 tsp. caraway seeds (optional) Combine first 4 ingredients. Blend in butter with your fingers. Add sugar, raisins, caraway seeds. Add milk last - a little at a time. Mix well with a wooden spoon. Put into a greased round cake pan (8 or 9 inch pan) and let stand for 15 minutes. Indent an X on top. Bake in 400 degree oven for 10 minutes, then 375 degrees for 50 minutes. To make sour milk: 1 1/2 cups whole milk, add 1 1/2 tablespoons vinegar or lemon juice, let stand until sour. |
