CHEESE POTATOES 
6-8 cooked potatoes, cubed
1/4 c. butter, melted
1/2 c. chopped green pepper
1 sm. jar pimientos
1/2 c. chopped onion
1 tbsp. chopped parsley
1/2 lb. Velveeta cheese, cubed
Salt & pepper to taste

Place cooked potatoes in a 2 quart dish, salt and pepper to taste. Top with onions, green pepper, pimientos and cheese cubes. Pour melted butter over all and top with parsley, cover and bake at 350 degrees for 30 to 45 minutes.
