OATMEAL PANCAKES 
1 1/4 c. milk
1 c. oats
1 tbsp. oil
2 eggs, beaten
1/2 c. whole wheat flour
1 tbsp. brown sugar
1 tsp. baking powder
1/4 tsp. salt

Combine milk and oats in a bowl. Let stand 5 minutes. Add oil & eggs, mixing well. Stir in flour, sugar, baking powder and salt. Mix just until moist. Bake on hot, oil griddle, 1/4 cup of batter for each pancake. Makes 10 to 12 four inch pancakes. A delicious start to a school day - sticks to your ribs!
