SPINACH OR BROCCOLI SOUFFLE 
1 pkg. frozen chopped spinach or broccoli (cooked and drained well)
2 eggs beaten
1/2 c. milk
1 c. grated sharp cheese
2 tbsp. chopped onion
Salt and pepper
Croutons
Grated Parmesan cheese

Mix all ingredients except croutons and grated Parmesan cheese. Put in a greased casserole. Top with croutons and Parmesan cheese. Bake at 350 degrees for 30 minutes.
