FRESH TOMATO SOUP | |
2 lbs. fresh tomatoes 2 tbsp. butter 3/4 c. chopped onions 1 garlic, chopped 4 c. chicken broth 1/2 tbsp. dried or 1 1/2 tbsp. fresh basil 1/8 tsp. pepper 1 tbsp. flour 1/2 tsp. paprika 2 tbsp. water Peel and chop tomatoes. Melt butter and saute onion and garlic 5 minutes. Add broth and seasonings and tomatoes to onions. Simmer 20 minutes. Combine flour, paprika and water. Add to soup and simmer a few more minutes. Makes 6 cups. |
