MEAT & NOODLES 
Chicken or turkey carcass (or other meat scraps, whatever you have, wings, necks)
1 beaten egg
2 tbsp. water
1 c. flour (half white & half whole wheat)

Meat: Boil meat and bones until meat falls off. Pick meat off bones. Put it back in water it was cooked in. (When boiling, I add chicken or beef soup base and/or poultry seasoning to taste.)

Noodles: Mix flour and salt. Make a well in center. Add egg. Add water gradually to make stiff dough. Knead on floured surface to mix well. Roll out and let stand 1/2 hour or so. Cut in slices and drop into pot of boiling meat and stock. Cook for 20-50 minutes or until done.
