CHOCOLATE MINT COOKIES | |
1 1/2 c. flour 1/4 tsp. salt 3/4 stick butter, softened 1 1/2 tsp. vanilla 1 1/2 tsp. baking powder 1 (10 oz.) pkg. mint-chocolate morsels 1 c. sugar 2 eggs Confectioners sugar Combine flour, baking powder and salt. Set aside. Melt 1 cup Nestle mint morsels. In a large bowl cream the butter and sugar, add melted chocolate and vanilla. Beat in eggs, add flour mixture and remaining 1/2 cup of chocolate morsels. Wrap dough in plastic wrap and freeze until firm, about 20 to 30 minutes. Preheat oven to 350 degrees. Shape dough into 1 inch balls. Roll balls in confectioners sugar and place on ungreased cookie sheets. Bake 10 to 12 minutes and cool on wire rack. Makes 3 dozen cookies. |
