BROCCOLI IN WINE 
3 lb. broccoli
1/2 tsp. salt
Wine Sauce
1 tbsp. butter
2 tsp. olive oil
2 garlic cloves, finely chopped
2 tbsp. fresh grated orange peel
1/2 c. fresh orange juice
1/2 c. dry white wine

Use a large stainless-steel pot. Melt butter with the oil over moderate heat. Add garlic and saute 3-4 minutes, stirring frequently. Add orange peel, orange juice and wine. Reduce the orange mixture over high heat until it is thick and syrupy (about 6-8 minutes), stirring often. Cook broccoli to desired tenderness. Toss together. Serve immediately.
