RHUBARB SPREAD 
3 c. cubed rhubarb
1/2 c. water
1/2 c. brown sugar replacement or other artificial sweetener to equal 1/2 c.
sugar
1 tsp. vanilla extract
1/2 tsp. cinnamon

Combine rhubarb and water in saucepan. Cover and cook over very low heat, 30 minutes, or until rhubarb is soft. Let stand 20 minutes. Stir in sweetener, vanilla and cinnamon. Chill.
