BROCCOLI WITH PARMESAN CHEESE SAUCE | |
2 (10 oz.) pkg. frozen broccoli spears 2 egg whites 1/3 c. light no cholesterol mayonnaise 1/8 tsp. salt 1 tbsp. grated Parmesan cheese Cook broccoli according to package directions and drain well. Beat egg whites and salt well, mix in mayonnaise. Pour over broccoli in baking dish and sprinkle generously with Parmesan cheese. Broil 3-5 minutes. Nutritional Analysis: Serving size 1/2 cup. 47 calories; 1 mg cholesterol; 112 mg sodium; 238 mg potassium; .7 gm fat, 11% calories from fat, .1 gm polyunsaturated, .2 gm saturated. Diabetic Information: 1 serving may be exchanged for 1 1/2 vegetables and 1/2 fat. |
