DAISY HAM & FRESH GREENS | |
1 daisy ham Water 3 or more bundles of greens (mustard, kale or collard) Morton's Lite Salt Prepare greens; pick leaves off stem and wash in cold water in sink. Add 1 tablespoon salt to water to clean the grime off leaves. Rinse in plain cold water a few times to remove all grime and salt. Set aside. Cut daisy ham into large pieces. Put in large pot with water and a few dashes of salt. Boil for one hour. Drain out all but enough water to cover ham. Set heat to medium. Add greens all at once to pot and cover. Cook for one hour. (If pot boils over, turn down heat.) Stir occasionally while cooking. Cook until greens are tender (1 hour or longer). If greens don't have a great deal of flavor, add a few shakes of salt. |
