TORTILLAS 
3 c. flour
2 tsp. salt
2 tsp. baking powder
1/3 c. lard
3/4 to 1 c. warm water

Mix salt, baking powder and flour, cut in lard like a pie crust. Add the warm water until dough begins to stick. Knead with hands for 1 minute. Let dough rest for 30 minutes. Divide dough in 12 to 14 pieces. Roll out to 6 inches and cook on dry griddle a few seconds on each side. Tortillas are eaten as bread with meals.
