APPLE FRITTERS 
1 beaten egg
1 c. milk
1 c. finely chopped or grated unpeeled cored apples
1/4 c. sugar
1/4 tsp. salt
3 tbsp. orange juice
1/2 tsp. vanilla
1 tsp. orange peel
2 c. all purpose flour
1 tbsp. baking powder
Vegetable oil for frying
Sifted confectioners' sugar

In mixing bowl combine beaten egg, milk, chopped apple, sugar, salt, orange peel, juice and vanilla. Fold into egg mixture, stirring just until all flour is moistened. Drop batter by rounded teaspoons into hot oil (350 degrees). Fry until deep golden brown, about 3 to 4 minutes, turning once. Drain thoroughly on paper towels. Roll in sugar or sift sugar over top. Yield: about 40.
