CAESAR SALAD 
DRESSING:

1 egg yolk
2 (3 inch) strips anchovy paste (don't be shy)
1 tbsp. minced garlic
1 tsp. Dijon mustard
5 tbsp. olive oil
2 tbsp. wine vinegar
3/4 c. Parmesan cheese

This will undoubtedly be the best you've ever had!!

Put the first 4 ingredients in a bowl and blend with a fork. Put in next 2 ingredients plus 1/2 cup of the Parmesan. Blend with a fork again; let chill for about 2 hours.

Meanwhile, prepare salad.

SALAD:

Romaine lettuce
1 c. croutons
1 c. sliced
Fresh mushrooms

Break up about 12 Romaine leaves; add croutons, mushrooms, and 1/4 cup Parmesan. Toss together; add dressing and toss again. Wonderful!
