MINI-CHEESE CAKES 
24 vanilla wafers
2 (8 oz.) pkgs. softened cream cheese
3/4 c. sugar
2 eggs
2 tbsp. lemon juice
1 tsp. vanilla
1 can cherry or blueberry pie filling

Place muffin papers in muffin tins with 1 vanilla wafer in each cup. Beat together cream cheese, sugar, eggs, lemon juice and vanilla until smooth. Fill paper cups 1/2 to 2/3 full.

Bake at 350 degrees for 25 to 30 minutes. Chill THOROUGHLY (cakes will fall). Remove papers carefully and fill each center with spoonful of cherry pie filling (3 cherries each) or blueberry filling.
