MINI-CHEESE CAKE 
2 (8 oz.) pkgs. cream cheese, room temp.
1/2 c. sugar
1 egg
1 c. graham cracker crumbs
4 tbsp. melted butter
4 tbsp. sugar
Crushed pineapple
Cherries, cut in half

Whip cream cheese, sugar and egg. Mix graham cracker crumbs, butter and sugar. Place 1 teaspoon graham cracker mixture in mini cupcake paper cups. Add crushed pineapple and fill with cream cheese mixture. Add 1/2 of a cherry. Bake at 350 degrees for 15 minutes.
