PEPPERMINT DESSERT 
1 1/4 c. crushed vanilla wafers
4 tbsp. melted butter
1 qt. peppermint ice cream
1/2 c. melted butter
2 oz. chocolate
3 eggs
1 1/2 c. sifted powdered sugar
1/2 c. pecans, chopped
1 tsp. vanilla

Combine 1 1/4 cups crushed vanilla wafers with 4 tablespoons melted butter. Press in 9 x 13 inch pan. Save 1/4 cup of crushed cookie and butter mixture. Spread 1 quart peppermint ice cream over cookie crust. Melt 1/2 cup butter and 2 ounces chocolate. Stir in 3 well beaten egg yolks with 1 1/2 cups sifted powdered sugar, 1/2 cup pecans, 1 teaspoon vanilla. Cool. Beat egg whites until stiff. Beat chocolate mixture until smooth. Fold in egg whites, spread chocolate mix over ice cream, top with 1/4 cup crumbs. Freeze.
