CUCUMBER IN ERSATZ SOUR CREAM 
1 c. low fat cottage cheese
1 sm. onion, finely chopped
1/4 c. plain non-fat yogurt
1 tbsp. fresh lemon juice
1 tbsp. reduced calorie mayonnaise
1 tsp. sugar
3 med. cucumbers, peeled & thinly sliced

In blender process cottage cheese, onion, yogurt, lemon juice, mayonnaise and sugar until smooth and creamy. Pour over cucumbers and mix well. Serve chilled. Sauce can be used on baked potatoes, etc.
