OLD FASHIONED CUCUMBERS IN SOUR
CREAM
 
10 - 12 cucumbers, peeled and thinly sliced
1 med. onion, thinly sliced
8 oz. sour cream or larger
Salt
Fresh parsley

Place sliced cucumbers in 9 x 13 inch pan, spread evenly. Sprinkle salt over all. Add sliced onion. Allow to stay at room temperature. Cover with aluminum foil overnight, or as long as it takes for all juice to be drained. Cucumbers should be wilted. Drain cucumbers and onions completely. Add sour cream to desired consistency. Stir. Place in serving bowl and top with fresh parsley. Serve chilled.
