SWEET & SOUR CUCUMBER CHIPS 
2 lg. cucumbers (about 1 3/4 lb.)
3/4 tsp. salt
1/2 c. green pepper, cut into 1/4" diced
1/2 c. thinly sliced onion
1/2 c. white vinegar
1/2 c. & 2 tbsp. sugar
1 1/2 tsp. celery seed

Peel cucumbers. Slice into 1/4 inch slices. Place in colander and sprinkle with salt. Let stand 2 hours. Drain well and place in medium bowl with green peppers and onions.

In separate bowl combine vinegar, sugar and celery seed. Pour over vegetables. Let stand minimum of 24 hours. Can be refrigerated 1-2 months.
