CHINESE SALAD 
1 can fancy mixed Chinese vegetables, drained
1 can water chestnuts, drained
1 can early sm. English peas, drained
1 can French cut green beans, drained
1 sm. jar pimento (if desired)
1 med. onion, chopped
1 1/2 c. chopped celery

DRESSING:

3/4 to 1 c. sugar
3/4 c. vinegar

Mix together all drained vegetables, onion and celery. Add dressing and refrigerate at least overnight. Lasts several weeks in refrigerator. You may add a can of vegetables or more onion or celery as time goes by.
