ZUCCHINI CASSEROLE 
2 sm. zucchini
1 can cream of mushroom soup
1 c. shredded Cheddar cheese
1/2 c. sour cream
1 box chicken - flavored Stove Top dressing

Slice zucchini in thin slices then cut each in half moons. Steam 3 to 5 minutes. Set aside to cool. Make Stove Top dressing according to recipe on box, except use 1 stick of butter. Mix soup, cheese, and sour cream together. Add cooled zucchini slices. In casserole dish spread 1/2 of dressing mixture in bottom, then zucchini mixture. Top with remaining dressing. Bake at 350 degrees for 30 minutes.
