BEETS AND PINEAPPLE 
2 tbsp. brown sugar
1 tbsp. cornstarch
1/4 tsp. salt
1 (8 oz.) can pineapple chunks
1 tbsp. butter
1 tbsp. lemon juice
1 (1 lb.) can or 2 c. sliced beets, drained

Combine brown sugar, cornstarch, salt in saucepan. Stir in pineapple (with syrup). Cook, stirring constantly, until mixture thickens and bubbles. Add butter, lemon juice, and beets. Heat through about 5 minutes. 4 servings.
